A quick, healthy snack your kids (and you) will love!
1 c. Bob’s Red Mill Gluten Free Organic Old Fashioned Rolled Oats
1/2 c. Justin’s Classic Peanut Butter
1/3 c. Pure Raw Honey
1 tsp. Pure Vanilla Extract
1/2 c. Ground Flax Seed
1 Tbsp. Chia Seeds
1/2 c. Enjoy Life Mini Chocolate Chips
Place “wet ingredients” in a KitchenAid Mixer & with a paddle attachment combine on SPIN setting until well incorporated. The wet ingredients will act as the “glue” when you form the bites. Next, add in your dry ingredients one at a time. Make sure all ingredients are combined & do not stick to the bottom of the mixer. Add in the mini chocolate chips & mix until dispersed throughout dough. During mixing process, use spatula to scrape down sides as needed.
To Form & Store
Using clean hands, grab the “dough” and roll in between palms to form a ball. You can make these any size you wish, but I personally like to keep them bite size! Place rolled balls into a container with an air-tight lid and allow them to set 2-3 hours or overnight. They will be just fine in the refrigerator for up to 5-6 days, but they never last that long in my house!
You can also switch it up and add in coconut flakes for some texture or swap out the chocolate chips with raisins!
