Protein Waffles 

the perfect breakfast packed with protein to jump-start your morning!

We love homemade waffles in our house! Too add protein & fiber into my kids diet, I have been using Kodiak Cakes mixes! You can’t go wrong with 14g of Protein & 5g of Fiber! For my children’s age range, they should be getting 25g of fiber/day & 18-24g of protein/day. I buy my Power Cake Mix at Costco for $11.99 & it contains 3, 24 oz. pouches. I don’t follow the exact directions on the box, so here is my recipe for these delicious waffles! I’d also like to note that I always double the recipe below & freeze the extra waffles. You can store them in a freezer bag & put them in the toaster oven until thawed & warm for a quick school-day breakfast!

You Will Need:

1 c. Power Cake Mix

1 c. Silk Vanilla Almond Milk

2 Tbsp. Coconut Oil, melted

1/2 tsp. Pure Vanilla Extract

1 tsp. Cinnamon

1 Tbsp. Ground Flax Seed

To Make:

In a large Pyrex bowl, combine all wet ingredients. Add in dry power cake mix & whisk until smooth. Melt another Tbsp. of coconut oil & set aside. Heat waffle iron (I use a Belgium-style iron) & with a baker’s silicone pastry brush, lightly brush iron with melted coconut oil. Pour batter into center of iron & gently spread it evenly with a silicone spatula. Be careful not to add too much or it will spill out the sides of the waffle iron! When iron “READY” indicator goes off, carefully remove waffle. We like to top ours with Pure Maple Syrup and berries!
