Almond Raisin Power Muffins

muffins packed with fiber & protein to get your “go” going in the morning!

2 c. Kodiak Cake Mix

1/2 c. light brown sugar, packed

1/4 c. coconut oil, softened (NOT MELTED)

2 ripe bananas, mashed

1 large egg

(For an egg substitute you can combine 1 Tbsp of ground flax to 3 Tbsp. of water)

1 c. Unsweetened Coconut Milk

1 tsp. ground cinnamon

1 tsp. pure vanilla extract

1/2 tsp. pure almond extract

 Organic Sun-Maid Raisins

Sliced Almonds (to top Muffins)

To Make:

Preheat Oven to 350º

Line a Muffin Tin & set aside

Mix together all ingredients then slowly add in Kodiak Mix, mixing until well combined

(I use my KitchenAid Mixer to make it easier to combine the coconut oil)

Fill liners 3/4 of the way with batter & gently place about 5 raisins into each liner. If you fold the raisins directly into the batter, the muffins will come out mushy. Sprinkle on desired amount of sliced almonds on top of the batter

Bake muffins for 18-20 minutes (maybe more depending on your oven)

Stick a knife into one of the muffins & if it comes out clear of batter, they are ready to come out & cool!

*Store in air-tight container in refrigerator & when you’re ready to enjoy them, warm them up!*

My kids LOVE these muffins with a side of cold milk & fruit!

p.s. you can also replace the raisins with mini chocolate chips!
