Homemade “Cheez-It”

Star Crackers


a healthier twist on a classic snack cracker

I’m back with another homemade kids snack! This recipe includes very few ingredients & is simple to make! You can get creative with the shapes….my kids chose a star this time! I made these vegan, but even if you substitute for regular cheese & butter, they would still be a healthier alternative to a store-bought cheese cracker.


 

Ingredients

-8 oz. Go Veggie Cheddar Shreds

-4 Tbsp. Coconut Oil, softened

-1/2 tsp. Sea Salt

-1 c. Flour (I used Whole Wheat Flour)

-2-3 Tbsp. Cold Water

Instructions

Using a food processor, combine all ingredients except the cold water. When the dough has a sand-like texture, pulse in water a Tbsp. at a time. After the dough completely forms together, wrap in plastic & chill for 15-20 minutes.

Preheat oven to 350ΒΊ. On a floured surface, roll dough to desired thickness. Cut shapes into the dough & repeat this process until all the dough is used up. Carefully place shapes on a lined baking sheet & sprinkle with some sea salt. Bake for 12-15 minutes until crispy. Watch them towards the end of bake-time so they don’t burn. Cool on a cooling rack & store (up to 5-6 days) in an airtight container.

My kids really loved these & ask me to make them all the time! I’m on the hunt to find a small enough fish cookie cutter! They pair great with sliced apples or grapes. They would also be a fun addition to your kid’s favorite soup!
