Happy First Day of Summer! I wanted to surprise my kids with a healthy, yummy after-school treat to celebrate Summer! This sorbet is delicious, stores well in the freezer, & you can switch it up & make the sorbet in any fruit flavor!

Ingredients

4 c. frozen strawberries, sliced

1/2 c. unsweetened almond coconut milk

2 Tbsp. raw organic honey

1 1/4 Tbsp. freshly-squeezed lemon juice

Pinch of sea salt

Instructions

Slice frozen strawberries (thaw a bit if too hard to slice). Pour almond coconut milk, honey, & lemon juice into blender. Add 2 c. of the sliced strawberries & blend until smooth. Add in the other 2 c. of sliced strawberries & pinch of sea salt. Blend until COMPLETELY smooth. Pour into a large plastic freezer bag & freeze. Scoop into a bowl & Enjoy!

*Note: If you’re eating this right away, it should be ready in 10-15 minutes! You can also make this ahead of time & store it to enjoy later on or in the days to come! If the texture seems “icy” after being in the freezer, you can blend it up again & add in the almond coconut milk a little at a time until smooth again!

I hope this recipe helps you stay cool all season!

Have a fun Summer,

Manda
