Vegan Brownie Sundaes

A gooey, rich, and delicious vegan brownie ready to be topped with your favorite ice cream or frozen yogurt! Some of our favorite healthier options are: Yasso Caramel Pretzelmania (pictured), Yasso Coffee Brownie Break, So Delicious Snickerdoodle, and So Delicious Chocolate Cookies N’ Cream!


• Ingredients •

5 T. ground flax seed + ¾ c. water

¾ c. vegan butter (Earth Balance is great!), melted

1 c. organic cane sugar

1 c. light brown sugar

1 T. pure vanilla extract

½ T. pure maple syrup

1 c. all-purpose flour, sifted

1 c. cacao powder, sifted

1 tsp. salt

½ c. non-dairy chocolate chips (I used Enjoy Life’s dark chocolate chips)

• To Make •

  1. Make flax eggs by combining flax seed & water, set aside to thicken
  2. Preheat oven to 350º & line an 8″ square pan with parchment paper
  3. Carefully melt butter in a glass Pyrex measuring cup in the microwave
  4. In a large mixing bowl, whisk together melted butter & sugars. Stir in flax eggs & vanilla
  5. Over the same bowl, sift flour & cacao powder. Add salt & stir until combined (without over-mixing)
  6. Fold in chocolate chips (and/or chopped nuts!)
  7. Transfer batter into lined pan, smooth down the top, & rack pan
  8. Bake for 40-45 minutes or until set (mine took the full 45 minutes)
  9. Allow brownies to cool in the pan for 20 minutes, then carefully pull up on the sides of parchment paper to transfer to a cooling rack. Let cool for at least another 30 minutes
  10. Slice, Serve, & Enjoy!
