Baked Oatmeal Cups

 Ingredients:

• 1½ c. old fashioned oats

• 1¼ T. chia seeds

• 1 T. ground flax seed

• 1 tsp. ground cinnamon

• 3 T. raw honey

• 6 T. vegan butter or coconut oil (I used Earth Balance Soy Free Butter), melted

• ¼ tsp. sea salt

• toppings of your choice!

Makes 9 cups


To Make:

• Preheat oven to 325°

• Using a silicone spatula, combine all ingredients in a medium bowl

• Line a cupcake pan with silicone cupcake liners (these are great!)

• Spoon 2 spoonfuls into each liner

• To form the cups, press down on the center and sides of each liner making sure there are no gaps (you can use the back of a spoon or your fingers for this!)

• Bake for 18-20 minutes

• Allow cups to cool for 5 minutes then transfer to cooling rack to cool completely (put them in the refrigerator for a speedy cool down!)

• Once cooled, carefully remove from liners

• Top with your favorite yogurt (frozen or not), ice cream, fruits, nuts, seeds, etc! Be creative!

• Enjoy!

Store the cups in an airtight container
